🍓 Strawberry jam 🍓
1kg strawberries
800g caster sugar
Lemon zest (of 1 lemon)
75ml Lemon juice
5g Pectin powder
4 jam jars
Wax discs
Cellophane discs
Elastic band
Jam thermometer
Sterilise jars and lids by washing in warm soapy water. Place upside down on baking tray in oven 15 mins 160 (use tongs when moving onto the surface to fill) HOT!
Quarter strawberries once washed and green bits removed, mash slightly in pan, add rest of ingredients boiling to 105 temp (put thermometer in at start and leave in until it reaches temperature).
Be sure to skim off any sediment on the top as it’s boiling.
Pour into the warm jars leaving 1/2 cm gap, put on wax disc, cellophane and do up and leave to cool.
Lasts 6 months unopened room temp or 1 month opened in the fridge.
